Today we’re talking about Costco’s next location, baby penguins, and Kansas City’s first Mexican sushi restaurant!Β 

1️⃣ Lawrence, KS is getting a Costco! The big box retailer officially announced that it will open a new location in the fall of 2026, just in time for Thanksgiving. The site plan for the 160,000 square foot store shows a location at the corner of K-10 and 6th Street in west Lawrence, right next to Rock Chalk Park and LMH Health West Campus.

2️⃣ β€œHappiness is hatching” at the Kansas City Zoo & Aquarium with news of four king penguin chicks being born at the zoo’s Helzberg Penguin Plaza! According to a post on the zoo’s Facebook page, the four chicks were all born within the past month, though only one is currently able to be seen by the public.

3️⃣ Mexican sushi food truck Kculichi’s will be the only brick-and-mortar space of its kind in Kansas City with the opening of its first standalone restaurant in KCK, set to debut next month at 543 Southwest Blvd. Differing from traditional Japanese sushi, most of their rolls are fried or baked, and many have bacon, beef or cooked seafood in them, and they might be topped with gooey melted cheese, chipotle sauce or serrano peppers. YUM!
